Birthday Cakes – Cambridge, ON

To avoid any confusion, Kaitlyn and Sydney are not twins.  They’re not even related!  BUT they were born a day apart and are also neighbours and friends who have been attending eachothers parties over the last 3 years.   

I’ve had the pleasure of making all three of Kaitlyn’s special birthday cakes and two of Sydneys which have always been based on some specific theme.  This year was no different except that for me the chosen themes were like stepping back in time.  

Ever notice how some ideas never die?  Everything from fashion to television programming comes into being for a short time, disappears, and then appears again years later.  Having noticed this pattern many times I was not surprised when I was asked to make a Care Bears themed cake for Kaitlyn and a Strawberry Shortcake cake for Sydney.  As a kid I adored both of these, but was especially fond of Strawberry Shortcake.  I even had a collection of Strawberry Shortcake figurines and stickers that were scented!! 

Over the years the Care Bears and Strawberry Shortcake have undergone makeovers and are not exactly the characters I remember them to be.  They’ve been modernized to some extent (not a shocker in this digital age).  But some elements remain the same and I’m happy to see that there are still some good old-fashioned cartoons out there that don’t have a parental advisory attached!

Baby Christian Has Arrived!

After much anticipation, Laurie and Peter got to meet their baby boy for the first time several weeks ago.  And after a few more weeks of settling into routine at home it was time to introduce him to everyone else! 

This past weekend Laurie and Peter held a meet and greet open house for family and friends and they requested a cake to celebrate Christian’s welcoming.  Laurie gave me free reign on the cake design which is awesome as some of my best work has come out of having creative control.  So for Christian’s cake I opted to use some stitched baby animal cut outs for a cute and fun look.  The selected flavour?  Chocolate SKOR cake…mmmm.

Congrats to the new mom and dad and to Christian who will one day realize how lucky he really is!

Backyard LEGOLAND

Ellen was at it again this weekend executing her son’s 5th birthday and as usual this party was a sight to be seen. 

Brennan is totally obsessed with LEGOs.  I should know.  I’ve seen their basement!  And so he requested a LEGO themed party this year.  This could’ve been a daunting task, but Ellen seemed to take it all in stride and claims it wasn’t that difficult at all.  Of course it’s easy…when you’re passionate about what you’re doing.  The rest of us need help.  Or hours spent on Google.

When Ellen first approached me about making the cake I honestly had no idea what to do with it.  Do I cut out 300 pieces of fondant to look like LEGOs and build something?  Sounds like a fun idea…but when you’re pressed for time, not so much!  We decided on a simple, three tier cake made to look like three oversized LEGO blocks.  With the built LEGO displays already in use this actually worked out great.

As for the actual event, Ellen moved the party outdoors into a tent set up in their backyard and she did a fantastic job coordinating the space.  Everything from mounds of empty boxes wrapped in LEGO colours for displays to the bubblewrap tablecloth painted green to look like the infamous LEGO base.  Even the stationery was customized which once again proves that it’s the little details that stand out.

On a side note, did you know that LEGOs originated in Denmark in the 1940s??  Yes, they’ve been around THAT long.  Goes to show you that some things really are timeless.

The Sweetness of Life

This past weekend Ksenia celebrated her second birthday and mom Lianne teamed up with my good friend Ellen to put on a fantastic party.  Planning parties takes time and this was no different than any other themed event.  Lots of brainstorming and research carried out over the span of a month was necessary to execute Ksenia’s birthday celebration and my small part obviously involved the cake.

The decided theme for the party was Bees as Ksenia is in a place where she is beyond fascinated with them.   What I find fascinating is the meaning associated with Bees.  The Bee is actually the symbol of accomplishing the impossible.  Aerodynamically, its body is too large for its wings and should not be able to fly.  Now understanding that its ability to fly is a result of a high rate of wing movement, the Bee remains a symbol of accomplishing anything you put your mind to.  It reminds us to extract the honey of life.  Maybe Ksenia is on to something!

To compliment this theme the colours chosen for the party elements were black, grey and yellow.  Overall, Lianne wanted the party to be classy affair, but still maintain a child-like feel.  Using the party invitations for inspiration, here is Ksenia’s 3 tier centrepiece cake.  A round of bee-topped cupcakes also made their way to the party, but they were picked up before I could get a proper photo!

Sun Salutations

Pure sun + warm temps = flips flops,  tank tops, and a reason to celebrate.   

Finally!  After what has seemed like eons since the clouds parted, the sun came out today in full force.  Just in time for the long weekend.  Maybe it’ll stay a while.  Or maybe it’ll go on hiatus again.   In any case it doesn’t really matter because I have thoroughly enjoyed this day as I hope you have as well. 

Today is also Laila’s first birthday and she got her very own cupcake smash cake to celebrate with.  As for the party guests, they also got their own cake!  However, Laila’s was a little different.  With an egg and dairy allergy this smash cake was unlike anything I’ve made before.  Having never catered to allergies it was a bit of a challenge. 

The cake was manageable as I received a gluten-free/egg-free/dairy-free banana cake recipe from a client and knew it worked, but the frosting was a different story.  Having used only dairy and egg based buttercreams and ganache in my cake fillings I was at a loss for what to fill and ice this cupcake with.  Then I came across a great Vegan Chocolate Frosting recipe which worked perfectly!  For anyone needing an alternative, here it is:

Vegan Chocolate Frosting

1/2 cup soy-based margarine, softened (ie. Earth Balance)

1/2 cup shortening

1/2 cup unsweetened cocoa powder (dutch processed)

3 cups powdered sugar, sifted

1/4 cup soy milk

2 tsps vanilla extract

Using a stand mixer with paddle attachment, cream the margarine and shortening together.  Add cocoa, powdered sugar and the liquids and mix on low until incorporated.  Once incorporated beat on high speed for 5-8 minutes until the icing changes texture and becomes light and fluffy.  Yields 4 cups.

You can also use rice milk, coconut milk, nutmilks or orange juice in place of the soy milk as well as add different extracts for a change in flavour such as peppermint, almond, orange, rum, or raspberry.  For someone like me who loves the real deal buttercream, I can’t say I’m thrilled with the margarine and shortening substitution, but it works.  And most importantly, it passes the flavour test!
